Reader's recipe: Penny's mum's apple cake

Ingredients

For one large cake

12oz self-raising flour

pinch of salt

8oz margarine

6oz sugar

4oz raisins

1lb cooking apples

1tsp mixed spice

3 eggs

Method

• Preheat the oven to 180C.

• Sift flour and salt into a bowl.

• Rub in the margarine, then stir in the sugar and raisins.

• Peel, core and dice the apples and add to the dry mix.

• Add the mixed spice to the bowl and mix well.

• Lightly beat the eggs and stir into the rest of the ingredients; there is no need to add any extra liquid.

• Pour the mixture into an 8in, high-sided cake tin and bake for about one and a quarter hours.

• Dredge the cake with caster sugar while it is hot from the oven.
