This soup is filling and tasty and looks like it could be used on the set of a zombie flick. It's also vegan and gluten free.
Red Quinoa Soup
- 4 cloves garlic
- 1 tin baked beans
- 1 onion
- 3 small beetroot
- 3 mushrooms
- 2 cups quinoa
- 1 small courgette
- 1.5 litres vegetable stock
- 2 tablespoons tamari
Put all of the ingredients into a large pan on a high heat, peeled and chopped into large chunks.
Bring to the boil and then turn it down to simmer for 10-20 minutes until all the vegetables are as soft as you'd like them to be.
Attack with a blender until it's as smooth as you'd like it.
